This tasty low-carb pasta dish makes a quick and easy dinner any night of the week.

1 pkg (200 g) Vegscrumptious – Pasta
3 tbsp (45 mL) olive oil, divided
1 lb (500 g) Italian sausages, casing removed
1 onion, chopped
1 tbsp (15 mL) finely chopped fresh thyme
3 cloves garlic, minced
1 finger chili pepper, seeded and finely chopped
2 cups (500 mL) cherry tomatoes
4 cups (1 L) packed baby spinach
1/3 cup (75 mL) grated Parmesan cheese
2 tbsp (30 mL) finely chopped fresh chives
- In large saucepan, bring 6 cups salted water to boil. Stir in pasta and 1 tsp (5 mL) oil. Cook, stirring frequently, for 5 to 7 minutes or until pasta is tender. Drain, reserving 1/4 cup (60 mL) cooking liquid.
- Meanwhile, heat remaining oil in large skillet set over medium heat; cook sausage meat, onion, thyme, garlic and chili pepper for 5 to 8 minutes or until sausage starts to brown. Stir in tomatoes; cook for 3 to 5 minutes or until tomatoes start to soften.
- Stir in pasta, spinach and reserved cooking liquid until pasta is well coated and spinach starts to wilt. Remove from heat. Stir in Parmesan cheese and chives.
Tip: Substitute 1/4 tsp (1 mL) red chili flakes for chili pepper if desired.
