Vegscrumptious Pasta with Sausage and Chili Pepper

This tasty low-carb pasta dish makes a quick and easy dinner any night of the week.

1 pkg (200 g) Vegscrumptious – Pasta
3 tbsp (45 mL) olive oil, divided
1 lb (500 g) Italian sausages, casing removed
1 onion, chopped
1 tbsp (15 mL) finely chopped fresh thyme
3 cloves garlic, minced
1 finger chili pepper, seeded and finely chopped
2 cups (500 mL) cherry tomatoes
4 cups (1 L) packed baby spinach
1/3 cup (75 mL) grated Parmesan cheese
2 tbsp (30 mL) finely chopped fresh chives


  1. In large saucepan, bring 6 cups salted water to boil. Stir in pasta and 1 tsp (5 mL) oil. Cook, stirring frequently, for 5 to 7 minutes or until pasta is tender. Drain, reserving 1/4 cup (60 mL) cooking liquid.
  2. Meanwhile, heat remaining oil in large skillet set over medium heat; cook sausage meat, onion, thyme, garlic and chili pepper for 5 to 8 minutes or until sausage starts to brown. Stir in tomatoes; cook for 3 to 5 minutes or until tomatoes start to soften.
  3. Stir in pasta, spinach and reserved cooking liquid until pasta is well coated and spinach starts to wilt. Remove from heat. Stir in Parmesan cheese and chives.

Tip: Substitute 1/4 tsp (1 mL) red chili flakes for chili pepper if desired.
